CHRISTMAS PUDDING.


CHRISTMAS PUDDING.

Classic English dessert.
Servings: Makes 8
Preparations time: About 15 to 20 minutes
Cookings time: About 10 hours
2 cups fresh white breadcrumbs
1 apple, grated
1 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1 cup grated hard shortening
1 cup all-purpose flour
Pinch of salt
1/4 teaspoon freshly grated nutmeg
2 cups fresh white breadcrumbs
1 7/8 cups soft brown sugar
2 ounces slivered almonds
1 1/2 cups currants
1 1/2 cups raisins
1 1/2 cups golden raisins
4 ounces dried apricots
3/4 cup chopped mixed citrus peel
Finely grated peel and juice of 1 lemon
3 eggs
2 tablespoons molasses
1 1/4 cups milk
2 tablespoons rum

1. Into large bowl, sift flour, salt, allspice, cinnamon and nutmeg. Add shortening, apple, breadcrumbs, brown sugar, almonds, raisins, currants, golden raisins, apricots, citrus peel and lemon peel.
In small saucepan, over low heat, heat molasses until warm and runny; pour into fruit mixture.

2. In large bowl, combine eggs, milk, rum and lemon juice; stir into fruit-molasses mixture.

3. Into two 5-cup bowls , divide pudding mixture; wrap with waxed paper, pleated for expansion; tie with string.
In large saucepan, or in steamer, over low heat, place pudding bowls and add enough water to reach halfway up sides of bowls.
Bring to low simmer; cook 10 hours, maintaining original water level throughout.
Serve decorated as desired.
Note: Cristmas Pudding will keep up to 1 year wrapped in cheesecloth and stored in airtight container. To serve, reheat in steamer or in simmering water in saucepan 3 hours.
