RECEITA DE FIOS DE OVOS MAGNÍFICOS.
Ingredientes:
1 quilo de açúcar .
1 litro de água.
15 gemas peneiradas .
3 claras.
½ gema de ovo desmanchada em ½ copo de água.
1 funil próprio para fios de ovos.
1 peneira fina .
Do de Preparar:
Coloque em uma panela a água o açúcar ,misture.
Junte 3 claras de ovos sem bater.
Leve ao fogo até atingir o ponto de fio grosso.
Retire do fogo.
Coe a mistura num pano próprio .
Leve a calda ao fogo em fogo meio forte.
Junte a ½ gema misturada no ½ copo de água.
Quando a calda ferver use as gemas peneiradas e coloque no funil e deixe a distância da panela de 6 ou 7 centímetros de distância e girando o funil e vá formando até 20 a 25 voltas.
Quando os fios estiverem firmes retire com uma escumadeira coloque em uma peneira e deixe escorrer.
Observação Importante:
Quando sentir que a calda estiver engrossando durante o cozimento , respingue um pouco de água para que não passe do ponto.
Pode ser empregado desta forma:
Egg yarn.

Ingredients:
1 pound of sugar.
1 liter of water.
15 buds sifted.

From the Prepare:
Put the sugar water in a saucepan, stir.
Add 3 egg whites without knocking.
Take the fire until it reaches the point of thick wire.
Remove from heat.
Strain the mixture into a cloth of its own.
Bring the syrup to the fire over medium high heat.
Add ½ mixed yolk to ½ cup water.
When the sauce is boiling use the sifted yolks and place in the funnel and leave the distance of the pot of 6 or 7 centimeters of distance and turning the funnel and goes forming until 20 to 25 turns.
When the wires are firm remove with a skimmer put in a sieve and let drain.
Important Note:
When you feel the syrup is thickening during cooking, sprinkle some water so that it does not overflo.
